Garden Pasta Salad

 

 I get a lot of requests for this recipe.  It is quick, easy and healthy.  Perfect for picnics.

Ingredients

  • 1 (16 ounce) package uncooked wheat tri-color spiral pasta
  • 1/4 cup carrots, diced
  • 1/4 cup broccoli, small florets
  • 1/4 cup diced red, green or orange bell pepper
  • 1/4 cup cucumber, peeled and diced
  • 1 large tomatoes, diced
  • 1/4 cup sliced black olives (optional)
  • 1 (16 ounce) bottle Fat Free Italian-style salad dressing
  • 1/2 cup Low Fat Crumbled Feta Cheese
  • 5 slices of ham or 1/2 cup cubed ham (optional)
  • 1/2 Tablespoon cracked papper
  • 1 clove minced garlic

Directions

  1. Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.
  2. If using sliced ham: roll each slice tightly into a"cigar" and cut into seversal spirals.
  3. Mix all vegetables, dressing and spices together in large bowl. Add ham and allow to rest until pasta is ready.
  4. Add cooled pasta and mix well. Add Feta cheese, mix well and chill.
  5. Chill for half hour before serving
