Amish Breakfast Casserole

This recipe is soo easy and the whole family loves it.  Sometimes I cook the sausage and vegetables the night before and put in a pan with the frozen potatoes overnight.  In the morning, the hashbrowns are thawed and I just add the cottage cheese, cheese and eggs and cook.  Takes less than 3 minutes!!  Also a great recipe for holidays and brunches.



  • 1/2 (Low fat) breakfast sausage link
  • 1/2 medium sweet onion, diced
  • 1/2 bell pepper, diced
  • approx 1/2 cup none, any or all of the following: fresh spinach, canned mushrooms, green onions, tomotos,
  • 3 eggs, lightly beaten
  • 2 cups frozen shredded hash brown potatoes, thawed
  • 1/2 cup shredded 2% Cheddar cheese
  • 3/4 cups (FatFree or Lowfat) small curd cottage cheese

    Directions

    1. In a large skillet, cook sausage and vegetables untill meat is no longer pink. Drain. In a bowl, combine the remaining ingredients; stir in sausage mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
    2. Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes.
